A sweet tasting brown crystalline cane sugar, granular in texture with no off taints. Demerara sugar still contains traces of the cane molasses (though not as much as found in soft light or dark brown sugars in the range) so has extra flavour and richness compared to white sugars and is used in a wide range of bakery recipes to add extra flavour as well as sweetness. Commonly used in rich fruit cakes, it is however often used in cookies, muffins, quick breads, and has other culinary uses as a topping in crème brulee and in speciality coffee drinks and cocktails!
