A sweet white pure crystalline sugar free from off taints or aromas. Used in a wide range of bakery and beverage recipes, especially where there is enough liquid present to ensure the sugar fully dissolves. Used in sugar boiling or candy work and caramel sauces and seen as being more suitable with larger crystal sizes than caster sugar and so less likely to burn during heating.
