A sweet dark brown crystalline beet sugar with cane molasses free from off taints or aromas. Described as the ‘cornerstone’ of sugar in the baking industry, it is used in a wide range of bakery recipes. It contains molasses combined with dark sugar crystals so has extra flavour and richness compared to plain sugars and even demerara sugar and is used in a wide range of bakery recipes to add extra flavour as well as sweetness. Commonly used in rich fruit cakes, it is however often used in cookies, muffins, chewy or darker richer meringue, quick breads such as soda breads. Can be used to sweeten premium coffees.
