Approved to make authentic ‘French bread’ under French 1993 regulations, this flour is untreated and suitable for long and short fermentation breads. It is mainly used for bread making but can also be used in confectionery, puff pastry, Danish pastry and croissants. Recommended for long fermentation processes. French bakery techniques normally produce more extensible and softer doughs than would normally be expected in white yeasted bread making here in Ireland. This flour is ideally suited to allow the baker remain faithful to French techniques. Can be used in standard bread and soda bread applications, however French flours, as its milled differently to Irish and UK white flours can have different water absorption characteristics.

Shelf Life

Kells does its best to deliver flours with a long a ‘best before’ life as possible. The actual best before on a flour can vary depending on when the flour was milled before the order was placed. Kells guarantees at least 1/3rd of the full best before shelf life of a flour given at the time of milling.     Ordered this flour a month ago and have been using it for yeasted bread, sourdough and pizza. It is a lovely flour with great texture and very fun to knead and mix with. I found that the crust, although beautiful is a bit more brittle than Marriages. This flour needs more work and I found a little more water as it can be a bit more dense. I really like it and want to keep trying new flours. It is fantastic for making pizzas too.

    Great for my sourdough and baguettes. Has less gluten than competitors so I use a little less time mixing (4 minutes) and less water. It does require more fermentation, overnight is ideal. Great service from Kells.

    Also I would like to know if you will have sometime French T150 Flour for sale?

    I must have bought five 25kg sacks of this by now (just for home use) so that tells you how good it is! Good for bread, pizza dough, works well in the bread maker, (we blend it with the Red Egyptian wholemeal, so let me know when it is back in stock after this year’s harvest please!). In fact we don’t bother buying plain flour anymore and find this T55 is good also for pastry and cakes even if the purists might disagree!
