Suggested Recipe

Mix: 1000g Cold Water: 400g Vegetable Oil: 400g Suggested Method: 1. Place oil, then premix into mixer bowl with beater attachment. 2. Mix on first speed until paste forms. Stop mixer. Scrape down. 3. Stream in water over one minute, while mixing on first speed. Stop mixer. Scrape down. 4. Mix on second speed for 3 minutes. Stop mixer. Add any fruit or other additions on slow speed until cleared through. 5. Weigh into muffin cases as desired (suggest 85g to 150g depending on muffin case used). 6. For an 85g–100g muffin, bake at 120–130°C for 28 to 31 minutes in a fan assisted convection oven with no steam. 7. Bake at 220°C for 25 minutes in a deck oven. Adjust bake time as required for different muffin size. Adjust time and temperature of oven as required to take into account type and performance of oven.
