Kells Pancake Mix (5kg)

Kells Pancake Mix: 1000g Buttermilk: 600g Water: 600g Suggested Method: 1. Using a planetary mixer, with a beater, add the liquids to the premix and mix on 1st (slow) speed until a lump-free batter is formed. 2. Stop the machine and scrape down. 3. Return to mix for 1–2 minutes on 3rd (fast) speed. 4. Pour required amount of batter onto hot lightly greased frying pan or hotplate (set at 200°C–220°C) and allow to spread to diameter required. Size of the final pancake is determined by deposit weight, and flow permitted. Cook until golden brown, turning during the cooking process to cook evenly on both sides. Adjust time and temperature settings depending on the performance of hotplate or pan used and the moistness of the inside of the pancake required. 5. Roll and sprinkle in caster sugar and fresh lemon juice (optional). 6. Or serve as customer wishes – honey, maple syrup or even savoury accompaniment.
