Kells does its best to deliver flours with a long a ‘best before’ life as possible. The actual best before on a flour can vary depending on when the flour was milled before the order was placed. Kells guarantees at least 1/3rd of the full best before shelf life of a flour given at the time of milling.     Excellent white flour for all kinds of white bread and Austrian specialities like Semmeln, Salzstangerl, Mohnweckerl etc. Also great in Baguettes.

    This will be my 3rd time ordering the Knoll Mill and after a slightly rocky start I am now producing great sourdough bread. It needed quite a warm space to rise compared to the Marriages flour but the taste is far superior.

Can I suggest you look at using a little (0.25 to 0.5%) Diastatic Barley Malt flour in the Knoll Mill organic white wheat flour and that will give a natural boost to fermentation speed.
