Originating in Ethiopia, this grain contains anthocyanins which contributes to its natural purple colour. Anthocyanins are a natural anti-oxidant. Now grown in Co. Kilkenny, this wheat is milled using the traditional stone grinding methods to yield a flavoursome wholemeal flour. Recommended used as a 20% to 30% inclusion with the strong white flour for an interesting twist to fermented breads or for use in soda bread.
