Suggested Recipe

Kells Ring Doughnut Mix: 1000g
Water (cold): 425–570g (water level can depend on performance of frying equipment)

Suggested Method:
1. Using a planetary mixer with a beater, mix for 1.5 minutes on 1st or slow speed, then stop and scrape down.
2. Mix for three minutes on 3rd or fast speed. (If using the lower end of water level, increase the mixing time to five minutes)
3. Place batter in depositing hopper a deposit into hot oil at 195 – 200°C. Turn doughnuts at least once during frying, normally around halfway through the frying process.
4. Tip: Do not allow the batter to stand too long in hopper over hot oil, or the raising agents can start to react prematurely. Load hopper as required and mix batter just to keep up with production demand.
5. Deposit weight and frying times are linked and deposit weight depends on the depositor nozzle diameter. For a 45g–55g deposit weight ring doughnut normally fries for 95–110 seconds.
6. Roll in caster sugar for simple sugar doughnut (optional).
7. Allow cool before filling or decorating (optional).
