Ingredient Declaration: Wholemeal Spelt Flour, White Spelt Flour, Skimmed Milk Powder, Vegetable Oil (100% Rapeseed), Raising Agents: Sodium Bicarbonate (E500ii), Sodium Acid Pyrophosphate (E450i), Monocalcium Phosphate (E341i), Salt.

Suggested Recipe

Mix: 1000g
Water: 545g

Suggested Method:
1. Add water to mix. Using a Hobart style mixer, blend until incorporated on first speed.
2. Scrape down. Mix for one minute on first speed to clear the dough and ensure its free from lumps.
3. Tip out onto a floured table (use spelt flour or premix) and allow to stand for 5 minutes.
4. Scale at 450 grams and mould as desired using spelt flour for dusting.
5. Place in a lightly greased 1lb tin.
6. Cut top surface (about halfway into moulded dough) and dust as desired for finish.
7. Bake for twenty-five to thirty minutes at 230°C.
