Suggested Recipe

Mix: 1000g
Water: 570g (cold)

Suggested Method:
1. Place mix in the spiral mixer and add water. Mix for one and a half minutes on slow speed plus three minutes on fast speed.
2. Rest for 10 minutes and mould into required doughnut shape.
3. Ensure fryer is filled with oil to the maximum level indicated and heat the oil to 190–200°C.
4. Deposit doughnuts into the hot oil. When the doughnut floats to the top (usually within 30 seconds of depositing), turn the doughnut over using a small palette knife.
5. Turn once more about 30 seconds later. Remove from the oil and allow drain and cool on a cooling wire over a papered tray.
